Bacon on the hoof

If you’re new to the blog, you may not have noticed that bacon is its own food group in the BLC/BH household. So I was glad to read Elise’s post about a visit she was able to make to Niman Ranch. She also has a really nice photo set of the trip on Flickr. Elise is a wonderful writer, and her site, Simply Recipes, is one of the first places I visit when I’m stuck for ideas. But it’s also a great post, since it’s a reminder that ethical issues of eating animals at all aside, if you’re going to do it, your food should be happy until the very last minute of its life. I’ll admit I don’t buy all organic, free range, grass fed, heritage and happy meat and poultry, but I try. Elise’s post is a good reminder to try harder.

    Magpie, I’ve always wanted to buy a pig, or a lamb, or a half a steer, but we don’t own a home yet, and our apartments have never been big enough to make room for a second freezer. Maybe I’ll convince my brother in law and his Lovely Fiancee to split a share with us. How much freezer room did you need?
